3 cups Bimi® Baby Broccoli, rinsed
9 ounces spaghetti (about half of of a standard 1-pound package)
1 jar of sundried tomatoes
1 lemon, zested and squeezed for 1 tablespoon of juice
Salt and pepper to taste
Optional
Garlic
Parmesan, feta or mozzarella cheese
Directions
Cook the spaghetti according to the package instructions.
Add Bimi® Baby Broccoli to a pan with a little oil (either olive oil or oil from the dried tomatoes) and cook for 2 minutes.
Cut sundried tomatoes into small pieces, chop the garlic (if using) finely and fry with it. Season with salt and pepper. Let sizzle for another 8 minutes.
Add 1 tbsp lemon juice and the lemon zest to the pan and bring to a boil together with 8 tbsp pasta water.
Add the cooked spaghetti and, if you like, top with fresh Parmesan, feta or mozzarella. Serve warm.
