Ingredients

  • 2 nests of dried noodles (we used fine wheat noodles – about 3 oz total)
  • 3 cups Bimi® Baby Broccoli, rinsed and roughly chopped
  • 3 tablespoons unsalted butter, at room temperature
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 teaspoons light brown sugar
  • 2 green onions (scallions), thinly sliced, for garnish
  • A squeeze of lime or lemon juice (optional)

Directions

  1. Cook the Noodles and Bimi® Baby Broccoli
Bring a small saucepan of water to a boil. Cook the noodles according to package instructions for stir-frying (typically 3–4 minutes).Add the chopped Bimi® Baby Broccoli to the boiling water during the last 3 minutes of cooking. Reserve about ¼ cup of the cooking water, then drain the noodles and broccoli. They should be just tender with a bit of bite.
  2. Make the Sauce and Stir-Fry
In a medium frying pan over medium-high heat, melt the butter, then stir in the gochujang and brown sugar. Let it bubble and combine into a glossy sauce (about 30 seconds).Add the noodles and Bimi® to the pan and toss to coat in the sauce. Stir-fry for 30–60 seconds, loosening with a splash of the reserved cooking water if needed.
  3. Garnish and Serve
Top with sliced green onions and a squeeze of lime or lemon juice, if using. Enjoy on its own or serve with sautéed shrimp for extra protein.
