Roasted Bimi® Baby Broccoli with Whipped Feta + Chili Crisp Breadcrumbs

Ingredients
½ tbsp salted butter
1 heaping tbsp chili crisp, plus more to serve
½ cup panko breadcrumbs
12 oz Bimi® Baby Broccoli, washed
Extra virgin olive oil
Salt and pepper
6 oz feta cheese
¼ cup tahini
½ lemon, juiced
1 tbsp honey
2-3 tbsp water
¼ cup chopped roasted cashews
Directions
Preheat the oven to 425 degrees Fahrenheit.
While the oven is preheating, heat a large skillet over medium heat. Once hot, add the butter and chili crisp. When the butter is melted, add the panko breadcrumbs. Toast the breadcrumbs for about 3-5 minutes, stirring frequently until they begin to brown. Once toasted, remove from the pan so they don’t burn and set aside.
Place the Bimi® baby broccoli onto a prepared baking sheet and generously drizzle with olive oil and a pinch of salt and pepper. Toss with your hands until the Bimi® baby broccoli is completely coated with oil. Roast for about 12-15 minutes or until the Bimi® baby broccoli is tender but crisp.
While the Bimi® baby broccoli roasts, add the feta, tahini, lemon juice, and honey to a food processor. Pulse until smooth, scraping down the sides as needed. Add a tablespoon of water at a time until a whipped, spreadable consistency is reached.
Spread the whipped feta mixture onto a serving platter. Top with the roasted Bimi® baby broccoli, followed by the desired amount of chili crisp breadcrumbs, and chopped cashews.
