Ingredients
1 tbsp extra virgin olive oil
¾ pound raw shrimp, peeled + deveined with tail left on
Salt and pepper
½ cup dry white wine
8 oz Bimi® Baby Broccoli, washed
3 tbsp salted butter
4 garlic cloves, thinly sliced
1 ½ tbsp freshly minced dill
1 ½ tbsp freshly minced chives
Lemon wedges, to serve
Directions
Heat a large skillet over medium heat. Once hot, add the olive oil.
Add the shrimp to the pan and season with a pinch of salt and pepper. Cook for 2-3 minutes per side, working in batches if needed until all the shrimp is cooked. Remove from the pan and set aside.
Add the white wine to the pan and allow the wine to simmer and cook out for 2 minutes.
Add the Bimi® Baby Broccoli to the pan and cover to steam for 4-5 minutes, stirring halfway through, until the wine has completely evaporated and the Bimi® Baby Broccoli is tender but still crisp.
Add the butter and garlic to the pan and saute with the Bimi® Baby Broccoli for about 3-4 minutes.
Add the shrimp back to the pan along with the minced dill and chives, stirring for another 1-2 minutes. Taste and add more salt and pepper if desired.
Garnish with fresh lemon wedges if desired and enjoy!
