Roasted Bimi® Baby Broccoli with Garlic Pesto

Ingredients

  • 3 ½ cups Bimi® Baby Broccoli, rinsed
  • Vegetable oil, for brushing
  • ¼ cup almonds (about a handful)
  • 1-2 cloves garlic, peeled
  • 3 cups fresh basil leaves
  • Juice of ½ lemon
  • ¼ cup extra virgin olive oil
  • ¼ cup finely grated Pecorino or Parmesan cheese
  • Sea salt and freshly ground black pepper, to taste

Directions

  1. Preheat the oven to 400°F.
  2. Roast the Bimi® Baby Broccoli: Place the Bimi® baby broccoli on a baking sheet. Brush with vegetable oil and roast for 5-10 minutes, until just tender.
  3. Make the pesto: In a food processor, pulse the almonds until finely chopped. Add the garlic, basil, and lemon juice, then blend to break everything down.
  4. Incorporate the olive oil: With the food processor running, gradually drizzle in the olive oil until the mixture becomes a smooth pesto. Scrape down the sides as needed.
  5. Season and finish: Stir in the grated Pecorino or Parmesan and season with salt and pepper to taste.
  6. Assemble and serve: Divide the pesto between two plates. Place the roasted Bimi® baby broccoli on top and serve immediately.
