Ingredients
3 ½ cups Bimi® Baby Broccoli, rinsed
Vegetable oil, for brushing
¼ cup almonds (about a handful)
1-2 cloves garlic, peeled
3 cups fresh basil leaves
Juice of ½ lemon
¼ cup extra virgin olive oil
¼ cup finely grated Pecorino or Parmesan cheese
Sea salt and freshly ground black pepper, to taste
Directions
Preheat the oven to 400°F.
Roast the Bimi® Baby Broccoli: Place the Bimi® baby broccoli on a baking sheet. Brush with vegetable oil and roast for 5-10 minutes, until just tender.
Make the pesto: In a food processor, pulse the almonds until finely chopped. Add the garlic, basil, and lemon juice, then blend to break everything down.
Incorporate the olive oil: With the food processor running, gradually drizzle in the olive oil until the mixture becomes a smooth pesto. Scrape down the sides as needed.
Season and finish: Stir in the grated Pecorino or Parmesan and season with salt and pepper to taste.
Assemble and serve: Divide the pesto between two plates. Place the roasted Bimi® baby broccoli on top and serve immediately.
