20 ounces Bimi® Baby Broccoli, chopped (2, 10 oz bags)
1 small-medium sweet onion, chopped
2 tbsp olive oil
5 garlic cloves
2 tsp salt
Freshly cracked black pepper
5-6 cups vegetable broth
2 tbsp salted butter
1/2 cup heavy cream
3/4 cup freshly grated parmesan cheese, plus more to top
½ lemon, juiced
Directions
Preheat the oven to 375 degrees Fahrenheit.
Place the chopped Bimi® Baby Broccoli, onion, and garlic cloves onto a large baking sheet. Drizzle with the olive oil and sprinkle with the salt and freshly ground black pepper to taste. Use your hands to toss everything together and massage the olive oil into Bimi®.
Roast for 15-20 minutes, stirring halfway through or until Bimi® is fork tender and soft. Remove from the oven and let cool for about 10 minutes.
Set aside 1 ½ cups of the roasted Bimi® Baby Broccoli for serving, then add the remaining roasted Bimi® to a high-speed blender along with 5 cups of broth. Blend on high until completely smooth. If the mixture is too thick, add more broth in ½ cup increments until desired consistency is reached.
Pour the mixture into a pot over medium-low heat. Once the mixture begins to simmer, turn the heat off and whisk in the butter, cream, parmesan cheese, and lemon juice until smooth.
Serve immediately and top with a small handful of the chopped roasted Bimi® Baby Broccoli and a fresh shaving of parmesan cheese. Enjoy!
