Ingredients
20 ounces Bimi
®
Baby Broccoli, (2, 10 oz bags)
2 ½ tbsp extra virgin olive oil
1 lime, zested and juiced
1 ½” knob ginger, grated
1 garlic clove, grated
2 tsp honey
½ tsp salt
Pinch freshly cracked black pepper
½ cup pomegranate seeds, for garnish
Lime slices, for garnish
Directions
Preheat the oven to 400 degrees Fahrenheit and lay the Bimi
®
Baby Broccoli onto a large baking sheet.
In a small bowl, whisk together the olive oil, lime zest and juice, ginger, garlic, honey, salt, and fresh back pepper until combined.
Pour over the Bimi
®
Baby Broccoli and using clean hands, massage the mixture into the broccoli until fully coated. Spread evenly over the pan.
Roast for 12 minutes or until the Bimi
®
is tender with a slight bite, and lightly browned.
Plate the Bimi
®
Baby Broccoli on a serving platter and garnish with desired amount of pomegranate seeds and lime slices if desired. Enjoy!
