Ginger Lime Bimi® Baby Broccoli

Ingredients

  • 20 ounces Bimi® Baby Broccoli, (2, 10 oz bags)
  • 2 ½ tbsp extra virgin olive oil
  • 1 lime, zested and juiced
  • 1 ½” knob ginger, grated
  • 1 garlic clove, grated
  • 2 tsp honey
  • ½ tsp salt
  • Pinch freshly cracked black pepper
  • ½ cup pomegranate seeds, for garnish
  • Lime slices, for garnish

Directions

  1. Preheat the oven to 400 degrees Fahrenheit and lay the Bimi® Baby Broccoli onto a large baking sheet.
  2. In a small bowl, whisk together the olive oil, lime zest and juice, ginger, garlic, honey, salt, and fresh back pepper until combined.
  3. Pour over the Bimi® Baby Broccoli and using clean hands, massage the mixture into the broccoli until fully coated. Spread evenly over the pan.
  4. Roast for 12 minutes or until the Bimi® is tender with a slight bite, and lightly browned.
  5. Plate the Bimi® Baby Broccoli on a serving platter and garnish with desired amount of pomegranate seeds and lime slices if desired. Enjoy!
