Bimi sauté® Brocoli-bébé à la crème de pois, au citron vert, aux amandes et à la menthe

Ingrédients
1 package Bimi® Petits brocolis, rincés
3 green onions (scallions), sautéed
2 cups frozen or fresh peas (250g)
½ cup cottage cheese (100g)
A handful of fresh mint leaves (for cream)
Zest and juice of 1 lime (for cream)
2–3 teaspoons soy sauce
½–1 teaspoon honey
Sel et poivre, selon le goût
Huile d'olive
Lime zest (for topping)
⅓ cup salted almonds, roughly chopped (40g)
Fresh mint leaves (for topping)
Directions
If using frozen peas, blanch them in boiling water for a couple of minutes, then drain. If using fresh peas, shell them first.
Rinse the Bimi® Baby Broccoli and pat dry. Sauté in olive oil with a pinch of salt for 2–3 minutes per side. Set aside.
Sauté the green onions in olive oil with a pinch of salt for 2–3 minutes per side, until tender.
Add the cooked green onions to a bowl along with the peas, cottage cheese, mint, lime zest and juice, soy sauce, honey, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed.
Spread the pea cream onto a serving platter. Arrange the Bimi® Baby Broccoli on top and finish with the chopped almonds, lime zest, and fresh mint leaves.
